Teff Flour

  • 1 cup weight = 120 grams
  • High in protein, fiber and calcium, this flour imparts a lightly sweet, nutty, molasses taste to cookies, cakes, quick breads, pancakes and waffles.
  • Teff Flour is milled from one of the world’s smallest grains. It is a key source of nutrition in Ethiopia.
  • It’s available in dark and light varieties.

Store in: the refrigerator for longer shelf life.
How to use: Should be no more than 25 percent of any flour blend.
Watch out for: Too much can overpower delicate recipes. Teff should not be used on it’s own in baked goods, it is so very fine, it almost melts when you bake it.
Substitution: Try a whole grain flavorful flour like quinoa and buckwheat or you could use sorghum or brown rice.
