Day 16: Samoa Coconut Cookies ~ Swirls and Spice
I go gaga over coconut cookies. When a picture of these Samoa Coconut Cookies from Julia at Swirls and Spice appeared before me I just had to have them. The fact that Julia slipped a vegetable into the recipe and chose to use unrefined sweeteners, only heightened my desire for one (or a dozen) of these cookies.
Our Girl Guides of Canada don’t sell Samoa cookies. They only sell the Chocolatey Mint Cookies and the Classic Chocolate & Vanilla Cookies, so we’re left to imagine how sweetly wonderful the Samoa cookies are, or we can do as Julia has done and make our own copycat versions.
Julia is a food blogger that I first connected with through the Food Bloggers of Canada network. She was living in Saskatchewan when she published this recipe but is originally from Oklahoma and has since returned to the U.S. to live in the Chicago area.
