Humm, what’s this? A seemingly random spice mix recipe from This Fox Kitchen?
I bet you were thinking that because it’s almost wintertime, my 52 Salad Recipe series would go into hibernation. Well, I’m here today with Salad #19. So if that was your train of thought, switch directions and get yourself into the kitchen because you are going to want to make this Chicken and Apple Salad with Spicy Peanut Dressing.
I would like to thank Natural Delights for sponsoring this post.
It’s not an exaggeration to say I love medjool dates, so it thrilled me when Natural Delights asked me to try some products from their new line of Date Rolls and offered to pay me to write a post about them. I received three different flavours to sample. Coconut Date Rolls, Almond Date Rolls and Pecan Pumpkin Pie Spiced Date Rolls.
This salad is quick to fix and enjoy as an accompaniment to your evening meal, or take it to the office for a nice satisfying lunch. We found that Napa (or Chinese) Cabbage is a nice change from the usual lettuce greens. It’s refreshing and not as heavy as our more traditional red or green cabbages.
Over the past few months, we’ve had this Avocado and Grape Arugula Salad many times in this Fox Kitchen. It’s become a family favourite. At one gathering this past summer, my sister actually turned down dessert in favour of finishing up what was leftover of this salad (and she has a sweet tooth to rival my own).
Let me introduce you to Salad #15 in this Fox Kitchen’s 52 Salad Recipe Series. This Arugula Herb Salad with White Beans and Olives is a good crossover recipe that is suitable for all seasons.
As a food blogger, I do a lot of online reading and follow tons of food blogs! I’m a proud member of Food Bloggers of Canada community and am especially fond of articles and recipes written by my fellow FBC’ers.
The series of 52 Salad Recipes is chugging right along. I missed a couple of weeks in June but at recipe number 12, we’re almost a quarter of the way to my goal and I’m happy with that.
I hope you’re enjoying the recipes. Google Analytics suggest that many of you are. This salad series is a good challenge for me. I’m not much of a goal setter but I committed to developing 52 seasonal (mostly) plant-based recipes for you, and because I said I would try to get a new recipe out each week, the series forces me to stick to a set blogging routine here in this Fox Kitchen. And that’s a good thing.
This Blueberry Mango Quinoa Salad is number 11 in this Fox Kitchen’s 52 Salad Recipe Series.
Blue and yellow are a favourite colour combination of mine. Why I didn’t use it on the blog, I don’t know but just look at this salad … isn’t it one of the most striking salads you’ve ever seen? I could sit and look at it all day long.
