Can you believe another year has gone by? And what a year it was! At least here in the Fox Household it was quite a year.

We made two trips to New York City last year, one in the Spring, and another one in the Fall. There were several trips to the Okanagan to connect with my parents and other family members who live there. One of those trips saw the family at come together to celebrate my Mom’s 80th Birthday in August. We were so happy to have had that time with her, as she died quite suddenly, one month later. 2014 was a year that brought the Lord Jesus and a new Church Family into my life. I haven’t shared much about that side of my life but I’m extremely grateful for all the positive changes that have come about. Even if I don’t share the more private things in my life here on the blog, I’m sure that you can guess by the tone of my blog posts that Life is Good in this Fox Kitchen. God is Good!

And then there was my growth as a Canadian Food Blogger. I attended my first food bloggers conference in October of 2014. Full of enthusiasm and a new confidence after the conference, I decided to ‘rebrand’ this Fox in the Kitchen blog. So my friends, early in 2015, Fox in the Kitchen will become This Fox Kitchen. I’m super excited about this blog makeover and have already started working on getting things tidied up here so that we are all set for the big move.

I’ve got a designer to work on a new logo but other than that, I will do most of the work myself, so things will probably be quiet around here until after I launch the new site. I will try to post quick updates on social media, so make sure you’re following me on Facebook, Twitter and Instagram for some sneak previews.

      The Chicken and Rice casserole is one of my favourites and its naturally gluten free. No fancy ingredients necessary. I tucked away some leftovers to make a turkey version of the casserole. Might add some dried cranberries 🙂

      I was surprised there weren’t more cookies on the list. With a killer sweet tooth I’m always drawn to the baked goods on food blogs. I have another chocolate macaroon recipe on the blog but these raw ones are dead easy and without all the added sugar, I imagine they’re much healthier.
